This recipe for Fast Taco Pie includes the following instruction:
Arrange the lettuce, tomatoes, cheese, and sour cream in concentric circles (one inside the next) on top of the beef mixture and serve immediately.
Question: pie is indeed more delicious if you eat it right out of the oven rather than reheat it later. Are there any tips or tricks for getting that fresh out of the oven experience back, say, 24 hours in a refrigerator later?
It Starts with a Crust
At some point soonish, I will want to break out from my cheeseburger pie and begin to make other sorts of pie-related yumminess. When I do, I will likely have to ditch the crust made from Pillsbury crescent rolls and learn how to make other crusts, proper crusts you might say. With that in mind, handy that I came across this article about making a crust that might belong on “the perfect pie”. Something that concerns me about such a crust however (and I will need to deal with in a very real, search-your-feelings manner) is the matter of lard.
Some health-conscious people will want to avoid lard in favor of a more user-friendly fat but still make a crust that stands above the rest. They can ride their magic unicorn over the waves of the Sea of Improbability and find a healthy substitute in a nice little bodega on the Isle of Not Going To Happen. Everyone else can keep reading.
Lemon Pie with Italian Meringue
Here’s a recipe for a fun twist on the standard lemon meringue pie – what makes it so special?
The crust is a sweet dough that also incorporates a hint of almond flour, the filling is a rich lemon curd and the billowy topping is an Italian meringue that makes you want to dive into it.
Me want.
Blueberry Pie for the Busy Guy
Here’s a blueberry pie recipe designed for speed and minimal effort, absolutely perfect for the male entry-level pie maker! Maybe I’ll make it for the party this weekend…

From the Today Show website comes an article about meaty dishes, like this roasted garlic shepherd’s pie (scroll down past the inferior non-pie recipe to find the shepherdy goodness). Excerpt:
Add hot cream mixture to potatoes, add seasoning, add roast garlic puree and mix all together thoroughly. Adjust seasoning as needed.
In a heavy bottomed stock pot sweat the onions, garlic, shallots, ground lamb and the filet until all thoroughly golden brown, about 10 minutes.

Pies Across America
One of my favorite places for pie porn is the popular Roadfood.com, a brainchild of Michael and Jane Stern–longtime and famous roadfood aficionados. It’s fun to browse around and check out places to eat around your state, but for some instant gratification, here’s a link to pie links on their site. Tuck your napkin into your shirt collar, grab a fork, and enjoy!

I would be remiss if I did not mention the television show Pushing Daisies on this blog, featuring “an eccentric protagonist who’s a pie maker by day and a P.I. by night”.
I admit I have yet to watch it (I’m not, in fact, certain it has begun yet). But the premise just sound, well, fun!
He makes his living baking pies for his restaurant, The Pie Hole, which is shaped like a gigantic two-crust dessert. And the reason his pies are so extraordinary is because he can touch fruit that’s gone bad and return it to peak ripeness. Ned can bring any dead thing back to life with a touch.
Does anyone who watches TV for more than the morning traffic report know anything more about the show, and/or might you be able to provide a review? Pie-enquiring minds want to know!
Ingredient Substitution Guide
This substitution guide to many different ingredients may be a handy reference for future pie baking activities. I know some of the things on the list don’t seem like they’d apply to pies, but… you never know with celebrants of TWFoP, do you?
